Guilt Free truffles...less than 60 calories per truffle!

Guilt Free truffles

Makes about 12 truffles ~55 calories each!

 

Ingredients:

½ cup good quality dark chocolate (I use Lindt 80%)

1 tbs all natural almond, cashew or peanut butter (Cashew is my favourite)

¼ cup fat free Greek yoghurt (I use Chobani)

1/3 cup good quality unsweetened cocoa powder

 

Method:

  1. Melt chocolate in the microwave (at 20 second intervals)
  2. While chocolate is still warm, stir in almond (or whatever you’ve chosen to use) and mix until well incorporated
  3. Carefully fold in Greek yoghurt, mix well and refrigerate for about 15mins until it starts to harden
  4. Working with approx 1 tablespoon at a time, form truffles, roll them in unsweetened cocoa powder and refrigerate until ready to serve.
